I've been trying to set my frmaes up like the following picture, and I'm running into walls everywhere. I'm definitely a novic, but I understand a decent amount about it. I'm not sure quite how to explain so here's the picture:
You can't "detach" them. The portraits in that screenshot are provided by a separate addon (I don't happen to know the name), and the texts are placed outside the unit frames themselves, with a blank space at the top of the unit frame above the health and mana bars. The unit frame background is set to 0% alpha so it's completely invisible, and the background behind the name/level text is added with a separate addon like eePanels.

There's a picture in the "Post cool Pitbull Layouts Here!" that looks a LOT like what the OP is asking for....
Savantido posted it, along with the coding (s)he used to make it.

Any help would be appreciated.

People really should mention that....
Sav's post just gave the coding and screenshots, and said nothing of extra addons needed to make that look.
Not very nice :(
Can you please tell me where in the config menu I can find the above option. I can't seem to find an option to set the alpha of any background.
Global Settings -> Colors -> Frame colors.
