Is there a tutorial for making our own Statblocks anywhere? I appreciate all the work you are doing, and I'd like to make a few of my own, even if they are for my own use. Thanks!
Aren't addons made by the author of SBC labelled as 'StatBlock' stuff, and the rest are left to their own devices? Seeing as they're really written to just work using LDB now? So... essentially they'd be LDB_ addons? xD

Yes. Unfortunately, the people writing these addons who aren't Funkydude are just going with the old "it's made for FuBar, so I'll call it FuBar_Addon" mindset. That helps grow the StatBlockCore userbase, though in a misleading fashion. IMHO, though I've been prepending my LDB addons with "nano", there is no need for an identifying prefix - even LDB_
The only LDB plugin I created was a TinyPad launcher which I named Broker_TinyPad to distinguish from FuBar_TinyPadFu and the TinyPad addon itself. But, yes, there is no official naming convention - you can call your LDB mods (both plugin and display) whatever you wish. I think Funky stuck with StatBlock_* because they were already called that for the original StatBlocks addon.

At the time I wrote this post, the only "fubar replacement" I knew of was Statblocks, and that's why I named it as such. At the time, I had no idea that the LDB movement was going to create different front ends like Fortress and Buttonbin.
Anyway, I almost have the addon I want written. It's showing the data right, but now it's down to semantics. It's an ugly add-on, for sure, definitely not even ready for Alpha-1.
